Ladyfish Latkes (patties)

back when newport pier was open i would keep this recipe secret that way everyone would give me their fish. now that its closed the secret to eating amazing ladyfish is out


most people throw back these fish due to lots of bones and soft flesh and meat
a few years ago i saw one of my Filipino friends collecting these fish left and right from other fishermen looking to throw them back off the pier
i asked him how he could eat these fish and this is what he told me to do

:chef: first fillet the ladyfish leaving the skin on (dosnt have to be perfect or pretty)

:chef: next take a spoon and scrape the meat right off the skin (it comes off very easily leaving all the bones stuck to the skin)

:chef: mix the meat with bread crumbs, spices (to your likings), one egg per fillet, chopped onions and garlic

shape into little patties or balls and fry
:dude: :dude: :dude:

wash down with a :toast: your good to go

Someone posted a similar recipe on another forum awhile ago, I'm still a little skeptical, but each to their own.

whether its snook bait or not they taste amazing!
the meat scrapes right off the fillets so you dont have to deal with tiny bones
fishings only boring if you suck at catching fish

Well, I took some fillet's off this "bait fish" and it gave some LONG nice looking pieces of meat. Haven't fried em' up yet, but I may follow my salmon recipe with the egg, bread crumbs, salt, pepper, garlic powder (use what you like) I didn't feel any bones in the fillets, but I think this is like a"Gar" fish situation which is DELICIOUS when cooked coon ass proper.
