We got two whole sides in the Country Club the other nite but I didn't get any. Is it good? The stuff we got felt a little mushy.

the meat is very compact not fishy not juicy its ok will taste better with a sauce or something its like eating chicken breast lol

A lot of people rave about wahoo, it is good, but not as good as some people say IMO. Granted, I usually prefer whiter fish, like snapper, grouper, permit, etc. I did have fresh wahoo sashimi once and that was awesome though.

next time season it with blackening spice, rub it in, and then pour greek vinaigrette dressing/marinade over it. let it marinate overnight and put it on the grill around 175 to 200 heat until done. i guarantee that dryness will go. you can try that on most dense meat fish.

Last time I had wahoo we marinated it in a lemon pepper than cooked it over the bbq wrapped in foil it was AMAZING

1. Next time, after you catch 1, stick a cigar in the wahoo's mouth until you get home, or,
2. Just wrap the darn fish in 1 of your cigars man, that should make it taste like smoke.
